Raw Lemon Power Balls
A year ago, I avoided pinterest. Today, I embrace it. I found a recipe for Lemon Balls (vegan and can be gf) and worked with it to make the best to date energy balls. It's not expensive to make them, and my recipe yields 70 plus 1 inch balls. It’s an one dish mixing with minimal utensils needed and you get nice soft hands from the coconut oils! You can freeze them, pull them out for your ride and they'll be thawed, ready to eat when you need a power boost. Here's the recipe for a refreshing and energizing treat.
2 cups Chia seeds
- I bought 1/4 of a pound, added 2 cups of water and soaked them overnight.
4 cups Organic Rolled Oats
1/2 cups Lemon Juice
- I soaked the oats in the lemon juice an hour before making, it softened the oats and gave them a zing.
I mixed the oats and chia seeds first. Make sure you have a strong stirring utensil and a strong arm, you're about to stir, a lot.
Next I added these ingredients;
1 cup shredded coconut
1/2 cup ground flax seed
3 cups finely ground cashews
1 tsp salt
I then stirred again, making sure to have consistency in the mix
For the final ingredients;
1/2 cup Coconut Manna (coconut butter)
1/2 cup Maple Syrup or 1 cup Brown Sugar or whatever sweets you like, to taste preference.
1 tablespoon lemon zest
1/4 cup of lemon juice or to the desired tart taste
Mix until you have consistency in texture and taste. Wash your hands, roll up your sleeves and roll 1 inch balls, placing them on a cooking sheet, I get about 4 in row, 6 rows. Fill sheets, place in refrigerator to cool for a few hours. After they have cooled you can place them in freezer bags to keep until needed. Also you get nice soft hands from the coconut oils, what a bonus! Place in a baggie before your big ride and enjoy!
